3 Ingredient Gluten Free Peanut Butter Cookies
Gluten Free Peanut Butter Cookies are one of my favorite treats. With only 3 easy ingredients you probably already have on hand in your kitchen, they are a perfect last minute treat. We love them, and I am sure you will too!
3-Ingredient Gluten-Free Peanut Butter Cookies
I am always seeing where my friends and even family members need gluten-free to avoid allergic reactions or discomfort. If I am making a special dessert, then it is important t me to be able to share with everyone. I hate seeing people feel left out, so making these gluten free peanut butter cookies are an amazingly easy solution. With 3 basic ingredients, it means I can literally make these in minutes, and never have to worry about shopping for something special at a pricey specialty foods store.
1 Cup Sugar
1 Cup Peanut Butter
Mix all three ingredients together in a medium bowl until well combined. You can use a hand mixer if you need to, but I found this easier to mix by hand. They will form a thick batter or rather wet dough. This is the consistency you want. Still moist, but able to fairly easily form into a ball. You just want this to be well incorporated and similar to the consistency of the inside of a peanut butter cup.
Next, you will preheat your oven to 350 degrees.
Roll the mixture into small balls about the size of a walnut and place 1″-2″ apart on a nonstick pan. I prefer using silicone baking mats to make sure there is no sticking. Once the pan is filled take a fork and lightly press on each cookie vertically and then horizontally, forming a crisscross pattern.
Next, you will bake them for 5-8 minutes. The time may be different as some ovens are different, be sure to check on the cookies often. The cookies are done once they start to crackle around the edges. I prefer softer in the middle, but you may want to cook longer for a crisp cookie.
